Mr. Pech Phab first joined Knai Bang Chatt in November 2015 as our Green Officer in our sustainability team. The function of a Green Officer is waste management, ensuring that our waste is correctly sorted for recycling, composting or disposal. Phab proved himself to be a dedicated and committed staff member and was moved to the role of gardener within only a few months. We discovered that Phab’s true passion and aspiration was to work in the kitchen and to become a chef so we gave him the opportunity to work in the Sailing Club kitchen team as a dishwasher. It did not take long for us to realise that he really did have the passion and desire to cook. We found him to be fascinated by how the kitchen worked and he was certainly asking inquisitive questions on how dishes were being prepared and what they tasted like. It was obvious that he was ready for the next step and we moved Phab into the role of Commis Chef which is the first rung of the ladder in becoming a chef. He is now being coached and trained by our Executive Chef and his peers and is well on his way to a successful career in the culinary world. We recently had a chat with Phab and he is really enjoying his time in the Sailing Club kitchen where he finds himself in fun, motivating and hard working team. His favourite dish from the current menu to cook is the crab linguine and when asked why he said “Kep is the best place for fresh crab and the pasta is like noodles but I have never tasted crab and noodles like this before, it’s very delicious, not the same as Khmer food”. His career dream is to become the head chef of a big hotel in the city and we are delighted to be paving this path for him and providing him with the tools to make this aspiration come true . Phab is a local young man aged 21 years from a village called Damnak Chong Er which is about 10klm from Knai Bang Chatt, he left school after grade 3 and has four siblings. At Knai Bang Chatt we are committed to building the careers and bringing the aspirations of our staff to life.
